Curry Salmon

INGREDIENTS

  • 4×4.4 oz (125g) Bakkafrost Salmon portions
  • 2 large onions
  • 2 tbsp butter or margarine
  • 2 tomatoes
  • 1 ½ tbsp curry powder
  • 1 beef stock cube
  • ¼ tsp pepper
  • ¼ tsp salt
  • ½ cup water
  • 0.6 cup (150 ml) cream

INSTRUCTIONS

STEP 1

Fry the onions in a tall pan together with the butter or margarine on low heat.

STEP 2

Cut the tomatoes into pieces and add to the pan, cook for 2 min.

STEP 3

Mix in the curry powder, stock cube, salt and pepper and let it simmer for 5 min.

STEP 4

Add water and cream, put it on high heat until the sauce bubbles up, then turn the heat down.

STEP 5

Add the salmon pieces and let it simmer for 10–15 min or until the salmon is steamed.

Serve with potatoes or rice (or steamed cauliflower if you follow the keto diet).
