INGREDIENTS
DRESSING
- 2 tbsp lemon juice
- 1 tbsp red wine vinegar
- 1 tbsp white wine vinegar
- 1 tsp dry mustard powder
- 3/4 tsp minced garlic
- 1 tsp chopped fresh dill
- 1/2 tsp dried tarragon
- 1/2 cup olive oil
SALAD
- 12 oz Bakkafrost salmon
- 1/2 cup white wine
- 1 cup water
- 8 oz penne pasta (gluten-free optional)
- 3/4 cup peeled and diced cucumber
- 2 tomatoes seeded and diced
- 1 cup thinly sliced red onion
- 2 tbsp plus 1 tsp capers
- 1 tbsp lemon zest
INSTRUCTIONS
STEP 1
Preheat the oven to 375ºF. Add all dressing ingredients to a bowl and whisk until well combined. Season with salt and pepper to taste.
STEP 2
Place the salmon on an oven-proof baking dish, add the water and the wine. Season with salt and pepper and bake for about 20-25 minutes or until slightly firm to the touch.
STEP 3
Cook pasta as per directions on the pack. Drain and set aside.
STEP 4
Once the salmon is cooked let cool and then crumble gently into a separate dish, set aside at least 2 cups of it.
STEP 5
Place all of the other ingredients in a large bowl and gently toss together.
STEP 6
Add the salmon to the bowl and add the dressing in stages, mixing well until you feel you have enough dressing mixed in.
STEP 7
Garnish with freshly chopped dill sprinkled on top and serve.
