Oven-baked bits of Salmon

INGREDIENTS

BRINE
  • Juice of ½ lemon
  • 3 tbsp olive oil
  • 2 tbsp honey
  • 2 garlic cloves, pressed
  • Thumb size ginger, grated
  • 6 pcs of 4-5 oz portions

 

  • Bakkafrost salmon
  • 4 peppers (mixed colors)
  • 25 black olives
  • 2 handfuls of peanuts or almonds
  • Ground lemon pepper

 

INSTRUCTIONS
STEP 1

Mix all ingredients for the brine and pour over the salmon in a plate. Refrigerate it for no less than 3 hours, preferably over night.

STEP 2

Cut the peppers into pieces and stir-fry on a pan with a bit of butter.

STEP 3

Place the salmon on an ovenproof dish and sprinkle with lemon pepper, then add the olives, nuts and roasted peppers on top.

STEP 4

Place it in the oven at 360°F for 15 minutes.

Sides: The dish is best served with jasmine rice and/ or crusty bread.
